Sichuan Spice Levels Explained: How to Order Exactly What You Want
“There’s one question I hear more than any other across this dining room: “How spicy is it, really?” I love it every time. It tells me the person wants to actually enjoy their meal — and that’s exactly the spirit Sichuan cooking is built for. Not a test of endurance, but a full sensory experience.”
— Chef Lijun Han
Here’s what you need to know before you order:
Sichuan Spice Is Two Things at Once
Most people think of spice as heat — the burn of a chili pepper. Sichuan cooking is more interesting than that. Our cuisine is built around mala (麻辣): the marriage of two distinct sensations.
|
麻 MÁ — THE NUMBING |
辣 LÀ — THE HEAT |
Together, the numbing tempers the burning, and the burning amplifies the flavor. A balance, not a competition.
The Z&Y Spice Map
Dishes marked with an asterisk (*) on our menu contain Sichuan heat and peppercorn — but not all asterisked dishes are equal. Here’s how I’d describe our range:
A quick note for first-time Sichuan diners: unlike the straightforward burn of a jalapeño or hot sauce, Sichuan heat comes with a second sensation — a gentle tingling numbness on the lips and tongue from Sichuan peppercorns, called má (麻), which softens the heat and makes bold dishes feel surprisingly approachable.
Level 1 🌶️○○○○ No Heat — Gentle & Fragrant
No chili, no peppercorn — pure flavor. Don’t mistake no spice for no complexity.
Tea Smoked Duck · Steamed Chicken Soup · Salt & Pepper Prawns · Braised Ox Tail w/ Red Wine · Dong Po Pork Shoulder
Level 2 🌶️🌶️○○○ Mild — Warm & Welcoming
A gentle introduction. Chili and garlic, soft warmth, a first whisper of peppercorn. Start here if you’re new to Sichuan cooking but curious.
Sliced Pork w/ Spicy Garlic Sauce · Eggplant w/ Garlic Sauce · Twice-Cooked Pork · Spicy Dumplings · Kung Pao Chicken
Level 3 🌶️🌶️🌶️○○ Medium — The Mala Begins
This is where Sichuan cooking reveals its full personality. The numbing arrives alongside the heat — a tingle on the lips, a warmth that builds and lingers. Where most regular Z&Y guests spend their time, and with good reason.
Couple’s Delight · Ma Po Tofu w/ Pork · Spicy Beef Jerky · Cumin Lamb / Beef · Spicy Numbing Beef Tendon
Level 4 🌶️🌶️🌶️🌶️○ Hot — Full Mala Experience
The heat is real and assertive. The numbing is pronounced — you’ll feel it travel across the tongue. Eat slowly, drink cold beer or jasmine tea alongside, and enjoy every moment.
Fish Filet w/ Flaming Chili Oil · Spicy Prawns in Clay Pot · Mao Xue Wang · Szechuan Chili Lamb · Spicy Clams
Level 5 🌶️🌶️🌶️🌶️🌶️ Explosive — For the Devoted
These are the dishes that have appeared in national reviews and kept our most loyal regulars coming back for years. The heat here is deep, enveloping, and extraordinary. If this is your level, you already know it.
Chicken w/ Explosive Chili Pepper · Frog w/ Flaming Chili Oil · House Special Fish Filet in House Spicy Sauce
A Few Tips Before You Order
- Tell your server your number. Honestly — 1 through 5. We’d far rather you enjoy the meal than endure it.
- Most dishes can be adjusted. We can’t always bring a Level 5 down to a 2, but for many stir-fries we can dial it back. Just ask.
- Order steamed rice with every spicy dish. Rice is not filler — it’s the balancing element that makes the whole meal work.
- Don’t skip the appetizers. Couple’s Delight or Spicy Beef Jerky are perfect for calibrating your palate before the mains arrive.
One Dish Worth Knowing by Name
LEVEL 5 · EXPLOSIVE · AS REVIEWED BY MICHAEL BAUER, SF CHRONICLE
Chicken with Explosive Chili Pepper — $25.95
The San Francisco Chronicle’s Michael Bauer described the golden fried dark meat as buried “like treasures in hundreds of dried red chiles” — and he wasn’t wrong. The dish arrives looking almost entirely like a pile of chiles. The chicken hides inside. You eat slowly, you discover each piece, and you understand why this dish has made Z&Y famous.
“Spice is not a competition at my table. It is an invitation — to feel more, taste more, and share more. There is a right level for every guest, and I want every guest to find theirs.”
— Chef Lijun Han
