Among the most famous dishes in Sichuan cuisine, Spicy Fish Boiled in House Special Sauce originated in the northern Chongqing region. Chefs typically prepare this dish using a Boiled fish fillet (usually fresh grass carp), bean sprout and peppers.

Based on Sichuan Boiled Beef (Shui Zhu Niu Rou), the distinctive versions of Sichuan spicy fish evolved. Soon after, the dish grew increasingly popular in Chongqing, eastern Sichuan and eventually throughout China. Today the dish is celebrated in Sichuan establishments around the world.
