Authentic Mapo Tofu Recipe

Description: This is a delicious recipe for creating authentic Mapo Tofu. It is provided courtesy of Z & Y Restaurant’s executive Chef Han, an internationally renowned chef in the world of authentic Northern Chinese cuisine.

Ingredients:

– 1 box (1 lb) Soft Tofu
– 2 Spring Onion
– 3 pieces of Ginger Slices
– Garlic Slices (Half of the garlic clove)
– 1 Tsp Black Bean
– Ground Pork
– 1 Tbsp Sichuan Chili Sauce
– Chili Pepper Powder
– 3 Tbsp Vegetable Oil
– 1/4 Cup of Chinese Shaoxing Wine
– 1 Tsp Chicken Bouillon Powder
– 1 Tbsp Cornstarch
– 1/2 Tbsp dark soy sauce
– Pinch of Salt
– 30 pieces of peppercorn

Instructions:

1) Cut tofu into cube 1/2″ x 1/2″
2) Cut the spring onion into 3 inches long.
3) Stir fry the peppercorn for 30 seconds in low heat. Grind the peppercorn into powder.
4) Put the tofu cube into hot water for 10 mins. Add pinch of salt.
5) Add 2 Tbsp vegetable oil. Stir fry the ground pork for 5 mins until the ground pork turns into brown in color.
6) Add spring onion, garlic, ginger, black bean and chili sauce to cook for 2 mins.
7) Add red pepper powder & wine to cook for 20 seconds
8) Add 2 tbsp of cold water into the cornstarch and stir it well.
9) Add 1/2 cup of hot water to boil. Add rinsed cooked tofu. Add dark soy sauce and chicken bouillon powder and cook for 1 min.
10) Thicken the sauce by adding the cornstarch water. Divide the cornstarch water into 3 portions and add one by one to thicken the sauce.
11) Serve in a big bowl. Sprinkle with peppercorn power and garnish with fine chopped spring onion. Serve hot.
